Title of the proposed R&D project: Method development and validation for the detection of acrylamide in food matrix.
Name and designation of Project Leader & Research Associates: Project Leader: Dr. Mala Khan, CSO and Director, DRiCM Project Associate: Mamudul Hasan Razu (SO), Rana Karmakar (SO).
Aims and Objectives: To develop valid and traceable analytical methodology for the analysis of acrylamide in food matrix.
Socio economic significance of the proposed Project:
1. Acrylamide is carcinogenic agents produced in high temperature without any external supplement causing toxic effect in human body such as neurotoxin production, hormonal imbalance etc.
2. Develop a reliable and traceable methodology for quantification of acrylamide in food can be used as national policy for food quality measurements through establishment of a data base.
3. The study will help to create public awareness on harmful effect of acrylamide in food.
Project current status: On going.
Metrology , as defined by the International Bureau of Weights and Measures (BIPM), is "the science of measurement, embracing both experimental and theoretical determinations at any level of uncertainty in any field of science and technology". It establishes a common understanding of unit, crucial in linking human activities.
